Yummy Coffee Cake and a Shamrock for you!


Hello Sweeties!
 
I hope you've all enjoyed the past ...month! 
I'm just awful at blogging, I know it!    I admire all of you who post so much more frequently, and it seems you do so with such ease.   
I'd really like to get better at this.  Maybe a once a week post can work?  I know that's still no big yahoo as far as posting goes, but it's a biggy for me! ;)
  
 Once again there are snowflakes falling and everything looks so beautiful covered in a fresh coat of white. I love the snow! ♥  I really can't believe March is already here and it will soon be spring.  I'll miss all the snow when it melts away, but soft spring breezes blowing past the curtains, pink roses along the front fence and chirping birdies,  are all lovely things to look forward to, and creating some springtime pins will be fun as well!
 
Are you in the mood for a sweet treat?  This is one of Ree Drummond's recipes (The Pioneer Woman)  I just adore her!  She calls it "The Best Coffee Cake. Ever." ...and oh my goodness, it really is!  The cake is moist and delicious and the sugary cinnamon topping is so perfect! 


The Best Coffee Cake. Ever.
 
Ingredients
 
For the cake...
1 and 1/2 sticks of butter, softened
2 cups scant sugar  
3 cups flour, sifted
4 teaspoons baking powder
1 teaspoon salt
1 1/4 cups whole milk
3 whole egg whites, beaten until stiff
 
For the topping...
1 and 1/2 sticks of butter, softened
3/4 cups of flour
1 and 1/2 cups of brown sugar
2 tablespoons of cinnamon
1 and 1/2 cups of pecans, chopped
 
Preheat your oven to 350 degrees.  Sift together flour, baking powder, and salt.  Beat egg whites and set aside. Cream butter and sugar.  Add flour mixture and milk alternately until combined.  Don't overbeat.  Fold in beaten egg whites with a rubber spatula.  Spread in a will greased 13 x 9 (or larger!) baking pan.  A cake pan with higher sides would be best.  In a separate bowl, combine topping ingredients with a pastry cutter until crumbly.  Sprinkle all over the top.  Bake for 40 - 45 minute, or until no longer jiggly.  Serve warm.

  2. I do enjoy your blog and wouldn't want to see it go away. Maybe every two weeks? I find your blog to be cheery and love all the shades of pink. What attracted me to your blog was your pins with all their detail, so I bought a couple from you and love them. I would like to buy more of them as the ones on the sides are so pretty.   6. Paulette, I love the Pioneer Woman, also see so many things that I would love to try. The only problem living by myself I would eat it all. The coffee cake looks yummy with a hot cup of coffee or tea. I love your shamrock pin and would love to have one of yours.     So, no one ever wants to be #1 for a giveaway, but sometimes I actually works out. I love all your pins (I actually wore my latest purchase from you to a concert a couple of weeks ago, and you wouldn't believe how many compliments I received!), but I don't yet have a shamrock! I think it would look lovely on MY jacket. ;-)

  14. Dear Paulette, I admire each and every piece of art you create. I am literally speechless whenever you add sth new, like today.
    It is the cutest shamrock ever and since I love green I already picture it on my scarf or bag;P I’d love to get it but just looking at it rejoices my eyes.
    Funny enough since the beginning of 2015 I am more into baking than sewing as well;P

Hiya Paulette..... me too on the not blogging very faithfully.... it seems I've given up making much ..with the exception of origami ornaments... hahahaha.... can you believe I'm still at it ..and having fun with them still. An older lady on our block wanted to learn to make them. she was having trouble folding the papers and tying knots in the fine threads with her arthritis ..but, finally she got it! We were both pretty excited...and, now ...she is coning once a week to run through our Tai Chi moves and do some origami.... probably winding down now that she has figured them out.
    I want to get back to some stitching..and... do you know of Dotee Dolls? ...I love those little things.... have lots of photos of them and want to do a couple of those next .... and, then some more of Karen's white on white embroidery ...

    glad to see your yummy cake...I do have a great apple coffee cake recipe .... probably you could just add some diced apples to this and have a good one....
